Okay, I can hear some of you mumbling how crazy I must be to suggest reasons to harvest dandelions. Many people view them as weeds but in actuality they are native plants and very beneficial. Dandelions provide nutrients for free if your yard allows them to grow in a chemical free environment.
I just finished my initial harvesting of dandelions which I will do each day until I mow to be sure and take full advantage of these free little beauties. I will infuse some in honey and others in olive oil. I am going to try the leaves in a salad or one of these dandelion recipes.
